What to make with tomatoes and basil?

I've been picking 1 or 2 tomatoes everyday and don't quite have enough to make marinara sauce. I also been picking more basil. What else can I do to use up these goodies? I already have eaten more pizza and tomato sandwiches that I can handle. LOL. So I thought it could be delicious in a quiche! The fresh basil really added an amazing flavor!

  1. Just a suggestion - it takes forever to load your blog pages. If you had fewer posts per page, it would be much faster as the browser wouldn't have to download many many photos.

  2. Like you said sandwiches - plain, with bacon, with ham...

    Salads, spaghetti sauce, soup, chili, tomato gravy.

    Luv to chop them up on top of my blackeyed peas and cornbread. Or my butter beans and cornbread!

    Plain with our veggies.

  3. Fresh basil pesto! My wife made this early this summer, and it has now become a staple at our house. If you like basil, you'll love this stuff.

  4. The prolific veggie in my garden this season is my cukes. I've been refrigerator dill pickles, yum! That Quiche looks pretty yummy too. :)

  5. Definitely make pesto, you can freeze it for later as well. You can freeze the tomatoes in plastic bags, for use in soups stews and sauces salsa later Make a simple tomato salad flavoured with basil and a splash of olive oil salt and pepper. Slow roasting tomatoes intensifies their flavour. Add herbs olive oil, parmesan, or mozzarella or goat cheese. Get Nigel Slaters book, Tender, from your library. He has a ton of ideas on what to make with vegetables.

  6. I make pesto with my basil. Yummy! As for the tomatoes, I couldn't help ya much. You could check Thy Hand Hath Provided. That girl does some amazing things with tomatoes. She makes some roasted tomatoes that look so incredibly delish! Happy gardening!

  7. Your quiche looks awesome! If you horde your tomatoes for a few days, you'll have enough for gazpacho (www.nycgardener.blogspot.com:)
    Summer Gazpacho (from Simply Recipes)
    I love this recipe. It's easy to follow and the soup tastes great!
    Ingredients
    6 ripe tomatoes, peeled and chopped, 1 purple onion, finely chopped, 1 cucumber, peeled, seeded, chopped,1 sweet red bell pepper (or green) seeded and chopped, 2 stalks celery, chopped, 1-2 Tbsp chopped fresh parsley, 2 Tbsp chopped fresh chives, 1 clove garlic, minced, 1/4 cup red wine vinegar, 1/4 cup olive oil, 2 Tbsp freshly squeezed lemon juice, 2 teaspoons sugar, Salt and fresh ground pepper to taste, 6 or more drops of Tabasco sauce to taste, 4 cups tomato juice
    Directions: Combine all ingredients. Blend slightly, to desired consistency. Place in non-metal, non-reactive storage container, cover tightly and refrigerate overnight, allowing flavors to blend.
    Serves 8.

  8. My first round of basil didn't make it, so the plants I have are just now starting to take off. I have plenty of tomatoes, and never thought of making a tomato basil quiche! What a great idea!
