Yippee

Ooooh, eggplant parmesan is in my future. I saw these babies finally growing. I am so beyond excited! The plant is pretty small, so I wonder how large these eggplants will get.
Of the 10 plants, only 2 plants have baby eggplants growing on them. How frustrating! Hopefully next year when we amend the soil, we'll have a better crop.

  1. I noticed that a lot of people are growing eggplants. I never picked up any because I have no idea how to cook them. Although eggplant parmesan sounds delicious!!!

    I hope the little egg plant grows quickly and that the others will follow suit. Isn't veggie growing fun? I mean you've either got more than you can possibly eat and you're handing it off to anyone and everyone or you've got nothing at all. I guess Nature likes to remind us Who's in charge. :)

  3. Good for you, it is a fine looking aburgine. We always try to pick ours when they are about 6" long and still nice and shiny but if you let it grow they can become fairly large and are still quite tasty when baked.

  4. I love eggplant and wish I could grow them here. I've had success starting them, but our summers are just too short for them. Hope you get lots more to enjoy!

  5. I picked one yesterday from our garden. I don't like for them to get too big because they can get seedy.
