I've mentioned a bunch of times on this blog that I hate, hate green bell peppers. I just don't like the taste. I grew orange and red bell peppers in the garden but they were so slow to turn color, and I had to harvest them green. So how do I prepare peppers if I don't like green ones? I harvested some nice green bells, so I decided to cut them up in itty bitty pieces and hide it in a pizza. I love pizza, and I figured if I used enough tomato sauce and cheese, I would barely taste the peppers. It worked!
In this pizza I used homemade tomato sauce that I made from family farm tomatoes. I'm still growing basil in the front porch, so I added some to the pizza. I also added ground beef and onions. I browned the ground beef before adding it.
I also made another pizza that was pure glutton! I didn't put any garden vegetables in this one. This pizza is a white pizza, I used crumbled goat cheese, cooked bacon, caramelized onions, and mozzarella cheese. Drizzle with seasoned olive oil before baking. To season olive oil, add salt, pepper and italian seasonings.
This pizza is divine! It's so unhealthy because of the bacon, but hey, I had to eat green peppers. I think that balances out. wink ;)

Potato Pancake Happiness!
I'm still trying out all the recipes I know that includes potatoes. I decided to make one of my husband's favorites, potato pancakes, (otherwise known as latkes)!
I use a food processor to shred the potatoes. It's fast and easy. I used about 7 medium sized potatoes.
To the shredded potatoes, I add 1 chopped medium onion, 2 cloves of garlic minced, 2 tablespoons of flour, and 2 eggs. These are eggs we got from the family farm. Look at the color of the yolks! The yolk is a brilliant yellow, unlike eggs you get at the supermarket. These yolks are richer in nutrients because the farm hens are free-range chickens so they eat a lot of grubs and such, and they eat only organic feed.
Aren't these eggs just beautiful? Can you see the bantam egg in the bunch?
Check out the bantam egg on the right, it's so little compared to the regular size egg. Cute.
Mix ingredients with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Spoon the mix onto a heated oiled frying pan. Flatten the spoonfuls with your spoon to shape the pancakes, and cook until brown on both sides.
Doesn't this look just amazing?
I was so excited about the potato pancakes until the cleanup. I was washing the lid of the food processor, and it slipped out of my hands and fell into the sink. The force of the fall broke off pieces of the locking mechanism on the lid... Pooh! Now I can't close the lid to use the food processor. Sooooo annoying! I tried looking online for a replacement part / lid, but this food processor is so old, they don't sell those pieces anymore. Argh!

Eggs-cellent
With the recent green heirloom tomatoes, I made a delicious egg and tomato sandwich. I just love the look of the green tomato sliced. Isn't it gorgeous? It's incredibly easy, just cook eggs the way you like them. In my case, I love fried eggs. Slice the tomatoes, add salt and pepper. In egg sandwiches, I love to add ketchup. A bit of lettuce on whole wheat bread. I still don't know what kind of heirloom it is, but it's delicious. A little sweet and tangy.
