Delicious Meal in 30 Minutes? No problem! When I was preparing dinner last night, I felt like Rachael Ray. I made this meal in "30 minutes". The jasmine rice, I cooked in my rice cooker, which takes about 20 minutes to cook. I bought a whole half of farmed raised salmon fish weighing about 2.5 pounds. First, I cut the salmon into serving sizes, and then baked in the oven at 350 degrees with butter, 1/2 juice of a lemon, salt and pepper for 20 minutes. The asparagus, I drizzled with olive oil, salt and pepper and baked it also in the oven for the same amount of time as the fish, but I should have only baked it 10 minutes. This is a great dinner when you have little time to cook, and yet has lots of flavor! I can't wait until my asparagus spears come up in the summer so I can use homegrown. Yummy.
Ooh--this is one of my favorite meals too! Made exactly the same way. I like asparagus anywhere crispy to barely heated.
ReplyDeleteI am starting asparagus this year(THIS WEEK!) but I thought you are not supposed to harvest til your 2nd year?
I'm excited to find another person growing asparagus--I cannot figure out why no one else does it besides the permanent bed & time lag.

ReplyDeleteLovely food! Good to know you have an asparagus patch too. I am looking forward to our asparagus spears coming through the soil! 3 plants were planted 3 yrs ago and another 12 yr before last. Looking forward to fresh, delicious asparagus - hopefully tons of it :)
ReplyDeleteYum! I've never baked asparagus, but have steamed, boiled, and microwaved it. I'll have to try baking it. Salmon is one of our favorite kinds of fish to eat.

ReplyDeleteThat looks fantastic! Lotsa times it seems like those 30 min. recipes require prep time not added into the mix. Nice to see a recipe that really does take only 30 minutes.
