Penne w/ garden tomatoes and basil
Every Saturday, Greenish Thumb hosts a Garden to Table challenge. For today's post, I'm posting an impromtu penne pasta. When I have fresh garden tomatoes and feel lazy about making sauce, I chop up tomatoes and throw them in the skillet with a little olive oil, garlic and garden basil. I don't measure the tomatoes, I just put enough to coat the pasta. Toss with cooked penne, salt, and pepper and mix really well. When everything is all incorporated, I add about a cup of mozzarella cheese. It is so delicious!
