Frozen Strawberries

I've been steadily collecting about a half pound of strawberries from the garden bed every day.  I'm really pleased with the harvest despite losing at least half of the berries to bugs.  Stupid bugs.  This was yesterday's harvest, all cleaned up and trimmed and ready for the freezer.
My gallon bag of frozen strawberries is just about full.  I think I will make strawberry jam next week.  Woo hoo, so excited!  Does anyone have a good recipe for strawberry jam?  I looked up the recipe in my Bernardin Complete Book of Home Preserving and it calls for 7 cups of sugar for 5 cups of strawberries.  That sounds like an awful lot of strawberry, my teeth is hurting already just thinking about it.

  1. I always add a 1/4 cup of fresh lemon juice with the berry measurement. It gives the jam that little extra! I think that most strawberry jam recipes call for a lot of sugar.

    Yikes, that is a lot of sugar! Years ago I made freezer jam, it called for less sugar but I still cut back on it. I think the recipe is on the pectin package. I remember it having a much fresher berry flavor...Have fun!

    I Just got a new canning recipe book, Tart and Sweet, and they talk about how you can cut back on the amount of sugars in your jams. I loved that because I HATE how all the recipes call for so much sugar!

  5. Those berries are gorgeous! We don't have all that many just yet, but we only have a few plants.

    It's been years since I made jam but yes, that does sound like a lot of sugar. I don't think it would hurt to cut way back on it. Good luck!!

  6. I can strawberry jam using Pomona's pectin, which requires very little sugar and sets beautifully!

  8. I am sooo jealous of your strawberry harvest. We get such tiny berries, they wouldn't even fill a bowl! You must have a big bed of berries!
